Ingredients
Crust:
20 -30 small Ginger Snaps (crushed)
5-6 tablespoons Butter (melted)
Filling:
2 cups Milk
1 tablespoon Corn Starch
1/2 cup Sugar
4 Egg Yolks
1 1/2 Square Semi Sweet Baking Chocolate (melted)
1 teaspoon Vanilla
1 package Unflavored Gelatin
4 tablespoons Cold Water
4 Egg Whites
1/2 teaspoon Cream of Tarter
3 tablespoons Sugar
1 cup Heavy Whipping Cream (whipped)
Preparation
Crust: Mix Ginger Snaps with butter and press into pie plate, bake 10 min. @ 325, let cool.
Filling:
In a double boiler: Cook milk, cornstarch & sugar over low heat until well scalded, add beaten egg yolks & cook until mixture coats spoon.
Remove 1 cup and add melted chocolate & vanilla to it, set aside.
Custard:
Soak gelatin in the cold water, add to remaining mixture in double boiler & let cool.
Beat egg whites with cream of tarter, sugar & salt. When gelatin mixture is cool, fold it into egg whites slowly.
Pour chocolate mixture into pie crust & cool, follow with custard mixture.
Top with whipped cream , and garnish with shaved chocolate. Refrigerate for several hours until set.
Cook's Notes
A tip about the shaved chocolate: If you warm the chocolate for several seconds in the microwave it shaves easier.
