Ingredients
1 tablespoon Olive oil
4 Eggs, beaten or 1 cup egg substitute
2 tablespoons Green chiles, diced
1/4 cup Shredded lowfat mozzarella cheese
1/4 cup Pinto beans, cooked, whole or lowfat refried
2 Whole wheat tortilla (7- to 8- inch) warmed
1/2 cup Salsa
Preparation
In medium skillet over medium heat add eggs and scramble, stirring frequently until eggs are almost set. Add green chilies and cheese and continue to stir until cheese is melted and eggs are set. To serve, spread or spoon half the pinto beans onto each tortilla. Top with half of egg mixture dividing equally between tortillas. Fold sides over and secure with toothpicks if desired. Serve with salsa.
