Ingredients

Veggie oil spray to mist the pan
1lb Ground beef
1 (12 oz) jar Salsa
6 Corn tortillas (10 inches )
i can Refried beans - fat free
i cup Reduced fat sour cream
1 pkg Preshredded mexican style cheese
(I grate my own)
Chopped fresh tomato
Chopped scallions

Preparation

Pre heat oven to 400o

mist skillet with cooking spray

on med - high heat crumble the beef

cook for 4-5 min.

stir in 1/2 salsa

spread the remaining salsa in the bottom of a 10 in glass pie pan.

top it with 3 tortillas.

spread half fo hte beans over the tortillas,

then half of the meat mixture

then 1/2 the sour cream

then 1 cup of cheese top

with the remaining 3 tortillas repeat the layers except 1/4 cup cheese

Cover the pie pan loosely with aluminum foil

bake the lasagna until hot throughout and cheese has melted, 20 -25 min. remove from oven let rest for 5 min. then serve in wedges with leftover cheese

We made this recipe vegetarian by using soy taco meat. My kids loved this, but the younger kid version substitutes diced tomatoes for the salsa. The regular recipe was too spicy for them. The rest of us thought it was perfect.
