Three Cheese Chicken Penne Pasta Bake
Ingredients
1 1/2 cup Whole wheat penne pasta, uncooked
1 pkg Fresh spinach
1lb Boneless chicken breasts cut into bit size pieces
1 tsp Dried basil leaves
1 1/2 cup Pasta sauce
1 2/3 cup Can diced tomatoes (drained)
1 cup Philadelphia light cream cheese spread
1 cup Kraft part skim mozzarella shredded cheese, divided
2 tbsp Light parmesan cheese
Preparation
preheat oven to 375 degrees F. cook pasta adding spinach to boiling water for the last minute.
cook and stir chicken and basil in large nonstick skillet on med-high heat. add pasta sauce and tomatoes; bring to a boil. simmer 3 min or until chicken is done. stir in cream cheese.
drain pasta and return to pan. add chicken mixture and 1/2 cup mozzarella. spoon into 2 litre baking dish.
bake 20 min and sprinkle with remaining cheese.
