Pasta with White Clam sauce

i always use whole wheat pasta when cooking meals

Ingredients

1 tbsp Olive oil

1/4 cup Chopped onion

2 cups Sliced mushrooms

2 tsp Flour

1/3 cup Dry white wine

2 cans Clams (5oz) reserving 3/4 cup of the juice

1 tsp Minced garlic

1 can (5.5 oz) evaporated 2% milk

1/8 tsp Ground nutmeg

8 oz Whole wheat pasta

2 tbsp Freshly chopped parsley

Black pepper

Preparation

heat skillet over med heat and add onions and mushrooms. saute for 5-6 min. sprinkle with flour and blend well. add wine, reserved clam juice and garlic; bring to a boil. reduce heat and simmer for 2-3 minutes until thickened. stir in clams, evaporated milk and nutmeg. simmer for 1-2 minutes or until heated through.

just before serving, cook pasta according to pkg instructions, drain. toss with sauce and sprinkle with fresh parsley. season with pepper.
