Apple and Cheese Carpaccio

Delicious for either the appetizer or the salad course.

Ingredients

1/2 lbs. Emmenthal cheese, sliced into thin strips

1/2 cup Celery, sliced

2 Red apples

1 tsp. Sesame seeds

3 tsp. Balsamic or red wine vinegar

5 tbsp. Olive oil

1 tsp. Ground black pepper

Preparation

1. Core and cut apples into quatrers

2. Slice each quarter crosswise into 1/2 inch chips

3. In a separate bowl, mix sliced apples and celery

4. Arrange on serving chilled serving plates with cheese

5. Sprinkle with vinegar and oil

6. Garnish with sesame seeds and ground black pepper

Cook's Notes

For a non-vegetarian variation, add some prosciutto.
