These fajitas are quick and easy, and can be adapted with whatever ingredients you like or are in season.

Ingredients

2 Pkgs Morningstar Farms frozen fake meat strips (you can use chick'n or fake beef)
2-3 Large bell peppers, any color, sliced
1 Large yellow onion, sliced
8-10 la Rge flour tortillas
1-2 tsp Oregano
1 tsp Cumin
1 tbsp Chili powder
Oil for the pan

Preparation

Cook the Morningstar strips according to the package directions. Set aside. Using the same pan with some oil (I use canola), cook sliced onions until lightly browned. Add bell pepper slices and cook until slightly softened; add back fake meat strips and all spices, stirring to combine. Heat thoroughly and serve with lightly heated tortillas. I like to serve with salsa, sour cream, and Chipotle Yumm! Sauce.
