Ingredients
2 ea. 15-ounce Cans of black beans
½ large white onion, diced
1 clove Garlic, minced
1 teaspoon Cumin
1 teaspoon Coriander
¼ teaspoon Oregano
¼ teaspoon Paprika
¼ teaspoon Cayenne pepper
½ cup Red peppers
½ package Frozen spinach (5 ounces), squeezed dry
1/3 cup Diced tomatoes (drain off any juice)
½ cup Asiago or other low-fat cheese
1 Egg
¼ cup Fresh chopped cilantro
1 tablespoon Dijon mustard
Salt and pepper
1½ tablespoons Olive oil
Preparation
Preheat oven to 425°F.
In a colander, rinse black beans with cold water.
Heat a medium sauce pan over medium-high heat.
Add in one tablespoon of olive oil.
Sauté onions until fragrant and translucent.
Add in spices: garlic, cumin, coriander, oregano, paprika, cayenne pepper, and red peppers.
When nicely incorporated, add in spinach and cook until heated throughout.
Remove from heat and set aside.
In bowl or food processor, mash half the beans to a thick paste.
Stir in the remaining beans, spinach mixture, low-fat cheese, egg, cilantro, Dijon mustard, salt, and pepper.
Mix well and form into six patties.
Brush patties lightly with olive oil and cook at 425°F for approximately 10 minutes.
Serve on whole-wheat buns with low-fat guacamole, fresh tomatoes, greens, and baked spicy fries.
