Ingredients
2 Boneless, skinless chicken breast halves (4 to 5 oz. each)
1/4 teaspoon Cracked black pepper
1/8 teaspoon Salt
1 package (4 oz.) Rice A Roni® Savory Whole Grains Roasted Garlic Italiano
1-1/3 cups Water
2 teaspoons Olive oil
3/4 cup 1-inch asparagus pieces
1/2 cup 3/4-inch red bell pepper pieces
1/2 cup 1/4-inch-thick slices yellow squash, halved
1/4 cup (1 oz.) shredded Parmesan cheese
2 to 3 tablespoons Shredded fresh basil leaves (optional)
Preparation
Cut chicken into 1-inch pieces, season with pepper and salt. Set aside.
In 10-inch skillet, combine contents of seasoning packet, rice, water and olive oil. Bring to a boil. Cover; reduce heat to medium-low. Simmer 13 minutes.
Uncover skillet, add chicken, asparagus, red peppers and squash. (Do not stir.) Cover, continue cooking until chicken is cooked through, about 14 minutes.
Remove skillet from heat. Stir well and let stand covered 5 minutes.
To serve, sprinkle with cheese and basil, if desired.
