"Blow an O-ring hot" chili

This is for those extreme heat lovers. It's also a nice chunky chili. Chili is a personal preference meal. Put in the things you like. I made this for 2 guys that like a lot of meat and heat. Chili usually intensifies in flavor after a day or two, and can be frozen for up to 3 months so don't worry about the excessive amount that this makes. Make it for game day!

Ingredients

4 Habanero Peppers

4 Serano Peppers

5 Jalapeno Peppers

3 lbs Ground beef

1 lb Hot pork

1 lb Chopped round steak

1 bottle Tabasco Habanero sauce

1 bottle Misc other extra hot hot sauce

1 can Kidney Beans

1 can Chili beans

1 can Pinto beans

2 tablespoons Cayenne pepper

1 tablespoon Chili powder

2 tablespoons Chopped garlic

2 tablespoons Cumin

1 tablespoon Oregano or italian seasoning mix

1 tablespoon Parsley

1 teaspoon Each Salt and Pepper

1 teaspoon Crushed bay leaf

18oz Can tomato sauce

12oz Can tomato paste

18oz Can crushed tomatos

1 Medium onion chopped

2 tablespoons Olive oil

3 cups Beef stock

Preparation

1. seed and core the peppers, then mince or food process so they're small enough to not be noticable in the chili

2. Chop onion

2. cut the steak meat into small peices

3. Brown the meats with salt & pepper or other meat seasoning of your choice. Drain.

3. Saute onion in olive oil until golden.

4. Add all the dry ingredients, tomato sauce, paste, tomatoes, hot sauces and stock together.

5. Cover and bring to a boil then add the meats.

6. Re-cover and Simmer for about an hour to an hour and a half.

7. Add the beans and simmer for half an hour longer.

Cook's Notes

You can saute the onions in a large stockpot if you have one big enough to house all of the ingredients when done. Otherwise I suggest transferring everything to the crockpot and that may take longer. I didn't start with a big enough stockpot so I got up to the point of needing to add the meats then I transferred to a 5qt crockpot. This recipe filled it to the brim when done. I also used some of the hot sauces, garlic, and italian seasonings when cooking the meat, but you don't have to. So I actually used more garlic and seasonings than listed but I didn't measure what I put in the meats, I just poured it out into my hand and tossed in.
