"Cola" Chicken

Ingredients

4 Skinless boneless chicken breasts
1 cup Ketchup
12 oz Can diet cola

Preparation

Put chicken in non-stick skillet. Pour ketchup and diet cola over the top. Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce.

Just wanted to add that lisa's calorie content seems way too high. Most of the information I've seen says between 150 and 250 calories per breast. Ketchup is about right for the whole cup. You figure that you aren't going to eat all of the "barbeque sauce", so you can figure that into any calorie counts. When looking for healthy meals, really keep in mind how many calories are coming from something simple like ketchup, and always see if there's a way to substitute. For the record, I have not tried it yet, but will update once I've tried something different

I loved this! I thought it was delicious and I plan to make it again. I only had pepsi on hand so it was very sweet which my husband did not like, but next time I will try it with a less sweet coke and see how it works out. The sauce was just perfect for me though and the chicken was so tender! Delicious!

2/18/2011 Delicious sauce. Made with mac 'n cheese and peas. I cut the chicken into small bites while letting the sauce reduce. After about 10 minutes, I added the chicken and cooked for another 30 minutes. Afterwards, I turned the heat on high as directed, cooked, and served. Delicious!

I made this dish last night and it was pretty good. I made wide cut potato wedges to go with it and a salad. I would suggest adding the chicken after the sauce has reduced quite a bit. I used smaller chicken breasts and they were a bit overdone. But, overall, I would make this recipe again.

This was a tasty change on the BBQ chicken theme. I agree with pre-warming the sauce as it did take some time to properly reduce.

i realy liked it.. i think next time i make it ill add the chicken to the sause after its cooked a bit. but if you like pulled chicken sandwiches it was perfict!

Just had to try this and we loved it. It's so simple. We don't drink soda in our house but this recipe was worth buying a can. ....and used regular Coke instead of diet. This chicken was very moist. I let it cook until the sauce was almost molasses consistency and carmelized on the meat. Served with a salad.

I looked up some nutrition facts on line - for my own use. Chicken Breast Meat - 16.9 fat. 162.4g protien, 844 calories, 432g cholesterol. 0 carbs Ketchup - 238.5 calories; 60 carbs, 0 fat, 0 protien, Diet soda - 0 everything.
