Preparation
1. Preheat oven to 350°. Cover baking sheets with parchment paper or grease lightly. Set aside.
2. In large bowl of electric mixer, beat together sugar, applesauce and egg whites just until blended.
3. Mix in flours, oats, baking powder and cinnamon.
4. Add apple and walnuts; mix to evenly distribute throughout dough.
5. For each cookie, spoon about 2 tablespoons dough, about 2 inches apart, onto prepared
baking sheets. Bake 20 minutes or until golden brown. Yield: About 15 cookies
