I'm a fan of many of the late, great JoAnna Lund's casserole recipes. They remind me of the Hamburger Helper I ate as a kid, yet are much healthier. This one is a staple in my home. The first time I made it, my husband asked if I could make it again the next night. Yes, it's that good.

Ingredients

8 ounces Ground 90% lean beef or turkey
1 (10 3/4 ounce) can Healthy Request Tomato Soup
1/4 cup Fat-free sour cream
1/2 cup (2.5 ounce jar) sliced mushrooms, drained
1/2 cup Chunky salsa (mild, medium or hot as per your taste)
1 tsp Dried parsley flakes
2 cups Hot cooked noodles, drained

Preparation

In a large skillet sprayed with cooking spray, brown meat. Stir in tomato soup and sour cream. Add mushrooms, salsa, and parsley flakes. Mix well to combine. Lower heat. Simmer 5 minutes or until mixture is heated through, stirring occasionally. Add noodles and mix well.

Serves 4; about 1 1/4 cups per serving

Cook's Notes

1 3/4 cups uncooked noodles usually cooks to about 2 cups. I "cheat" and make this with reduced fat sour cream instead of fat free. I also use a 4 or 5 ounce can of mushrooms, as my family loves them. This freezes and reheats very well.
