1. Cook Pasta in boiling water in a large saucepan following packet directions. Drain, set aside, keep warm.
2. To make Carbonara sauce, cook ham, prosciutto or bacon in a fying pan over a medium heat for 3 minutes until crisp.
3. Stir in stock and cream, bring to simmering and simmer until sauce is reduced by half.
4. Remove pan from heat, whisk in eggs, parsley and black pepper to taste. Return pan to heat and cook, stirring for one minute. Remove from heat, add hot pasta to sauce and toss to combine. Serve immediately.
