Sausage and Ravioli Soup

A great soup for the cool fall/winter days

Ingredients

1 lb Fresh Italian sausage

1 can (14.5 oz) diced tomatoes

1 can (15.25 oz) corn, drained

1 can (14 oz) Chicken broth

2 cups Water

1 tbsp Italian Seasoning

3 cups Baby spinach

1 cup Carrots, sliced

1/2 cup Benefiber

1 tbsp Garlic, minced

1/2 cup Onion, diced

1 1/2 tsp Salt

1 tsp. Pepper

1 lb Spinach and cheese ravioli or cheese tortellini

Preparation

1. Remove casing from the 1 lb of sausage. Crumble and brown in skillet over medium heat

2. In a large pot, combine browned sausage, diced tomateos, corn, chicken broth, water, seasoning, spinach, carrots, Benefiber, garlic, onions, salt, and pepper. Over medium-high heat, bring to a boil.

3. Add ravioli/tortellini to the pot and boil for 3 minutes, then decrease heat to low and simmer for 20 minutes.

Cook's Notes

This goes well with the Grilled Mozzarella Panini.
