Chili Verde

I like to cook the pork and sear the jalapenos the night before. Then I throw it all in the crockpot on low for 6-8 hours. It's wonderful to come home to!

Ingredients

3 to 4 pounds Fresh, chopped lean pork

3 Or 4 jalapenos - sear in pie tin to soften

1 Large onion

1 Large can tomatillos - mash or squeeze - do not used all the liquid

2 cans Salsa verde

2 to 3 tbsp Cumin

1 or 2 cans Chopped green chilis

1 tsp Chili powder

1 tsp Salt

1 tsp Pepper

1 tsp Sugar

Flour tortillas

Preparation

Salt, pepper, and lightly flour pork. Brown in slight bit of olive oil. Pour into big pot with a cup of water and simmer slowly, 1/2 to 1 hour after it comes to a boil.

Add all other ingredients and simmer until tender.

Taste it, and add & subtract until it tastes like you want it to.

You may want to add some regular salsa.
