Beef Enchiladas

Lorie has perfected these simple enchiladas, which use cans of store bought sauce.

Ingredients

2 cans Old El Paso Enchilada Sauce, one hot and one medium

1 lb Ground beef

1/2 Small white onion

Salt

1/2 tsp Cumin

1 tbsp Vegetable oil

3 cups Shredded cheese

1 package Corn tortillas

Preparation

Add spices to ground beef and brown

Drain meat

Empty sauce into a pie plate and heat some vegetable oil in a pan to soften the corn tortillas

Lay some paper towels down to absorb some of the oil off the tortilla

Dip each tortilla in hot oil for 5 seconds, then dip in sauce

Add meat mixture and some cheese to each tortilla and roll

Fill the bottom of a baking dish with the enchilada rolls and add sauce on top, then do another layer

Add enough sauce on top for flavor

Add a layer of cheese on top

Heat in oven at 350 until cheese melts and barely starts to brown

Cook's Notes

Frying the tortillas in oil isn't the most healthy way, but it is the best!
