Arame and Black-Eyed Peas

Ingredients

2 cups Dried black-eyed peas

4 cups Water

2/3 cup Arame

3 tbsp Soy sauce

2 tbsp Maple syrup, brown rice syrup, or agave nectar

1/2 tbsp Minced fresh ginger

1 tsp Brown rice vinegar

1/4 cup Chopped fresh cilantro or parsley

Preparation

Soak peas in plenty of water for 4 hours or overnight. Drain. Place peas, water, and arame in heavy-bottomed pan. Cover and bring to a boil. Reduce heat and simmer 30 minutes, or until peas are tender. Stir in soy sauce, syrup, ginger, and vinegar. Sprinkle cilantro or parsley over peas.
