Combine rice and water in pot and bring to boil.
Cut chicken into small cubes and cook over medium heat (small amount of oil can be used if desired)
Once water begins to boil turn heat to low, pour broccoli, peas, & carrots into rice to cook. Cover pot stirring occasionally.
Once chicken is 75% cooked move to one half of pan and crack eggs into pan. Scramble eggs and, once cooked, mix in with chicken.
Once rice & veggies are cooked mix together with chicken and serve.
