Baked Spagetti

Delicious baked spagetti dish, can also be made ahead and frozen. I often make two, eat one and freeze the other for another night.

Ingredients

12 oz Whole wheat spaghetti

1 Onion, chopped

1 Green pepper, chopped

1 clove Garlic, chopped

1 cup Diced canned tomatoes

1 lb Sliced mushrooms

1 can Campbell's tomato soup

1/2 lb Light sharp cheddar, grated

Preparation

parboil pasta - 5 min

Saute the onions, bell pepper and mushrooms until soft about 6 minutes, add garlic andsaute one more minute, add canned tomatoes and cook 2 more minutes

Mix together with soup, pasta and 2/3rds of the cheese.

Put into a 13x9 baking dish coated with cooking spray.

Top with remaining cheese and bake until bubbly and crusty on top - about 30 minutes at 350 degrees
