Chicken and Pineapple Kabobs

This is a healthy summer recipe that is easy to prepare. You can grill these kabobs on the grill on a sunny day or bake them in the oven.

Ingredients

8 ounces Chicken breast, cooked and cut into 16 cubes

1 cup Fresh pineapple, cut into cubes

1 cup Cherry or plum tomatoes

1 Large green bell pepper, chopped

½ red onion, chopped

Freshly ground black pepper , if desired

Marinade:

1/4 cup Fresh lime juice

2 tbsp Honey

1/2 tsp Cayenne pepper

2 tsp Chili powder

1 tbsp Finely chopped cilantro

Preparation

To prepare marinade, whisk together all ingredients.

Using a presoaked skewer add one pineapple chunk, one piece chicken, cherry tomato, green pepper and red onion. Repeat if skewer is long enough (keep in mind serving size will be only two skewers). Then, marinate for at least one hour. Add freshly ground black pepper, if desired. Grill skewer until chicken is cooked through.

Serve hot over Spanish rice
