1. Coat a aking pan with cooking spray. Rinse the fish and pat dry with paper towels. Place the fish in the pan.
2. In a small bowl, combine the remaining ingredients. Rub the mixture on the fish. Refrigerate for about 15 minutes.
3. Preheat the oven to 400.
4. Bake the fish for about 30 minutes, or until it flakes easily with a fork and is opaque inside.
Best eaten with in 2 days; do not freeze.
