Buffalo Chicken Chili Mac

Ingredients

2 lbs Chicken

1 Large carrot cut up

1 Medium onion diced

1 Celery stick diced

5 cloves Garlic

1 tbsp Paprika

1 Bay leaf

Salt and pepper to taste

2 cups Chicken stock

1/4 cup Hot sauce

1 15 oz. Can crushed tomato

1 box Elbow macaroni

1/2 cup Pepper jack cheese

1/2 cup Blue cheese

Preparation

Dice chicken and brown in a skillet. Add carrot, onion, celery, garlic, paprika, bay leaf salt and pepper. Cook until vegetables are tender. Add chicken stock, hot sauce and crushed tomatoes and bring to a boil. Simmer 8-10 minutes.

Toss cooked pasta into chili. Sprinkle with pepper jack and blue cheese and brown in broiler.

Cook's Notes

You may want to start with less blue cheese and hot sauce because they are strong flavors.
