Heat oven to 350
Spray 6 muffin cups with cooking spray
Combine flour, splenda, baking powder and salt in bowl
Beat together egg, milk and oil. Blend in preserves. Add to flour mix and stir until just moistened.
Fill muffin cups evenly
Bake 20-30 minutes until passes toothpick test.
If desired, may spread additional preserves on top of muffins.
