Chicken & White Bean Soup with Spinach & Parmesan

Ingredients

3 14 oz Cans chicken broth

1 1/2 cups Tomato & basil pasta sauce

1 15 oz Can cannellini beans, rinsed & drained

3/4 tsp Crushed red peper

3 Chicken breast - sliced thin

6 oz Baby spinach

1/2 cup Chopped basil

3/4 cup Grate Parmgiano-Reggiano cheese

Preparation

Bring chicken broth, pasta sauce, cannellino benas & crushed red pepper to a simmer. Turn heat to low. Season chicken with salt & pepper, add to broth. Gently poach chicken, stirring occasionally for about 2 minutes. Stir in baby spinach. continue cooking soup until spinach is wilted & chicken is done, about 2 minutes. Stir in basil, season with salt & pepper to taste. Ladle into bowls; top with cheese.
