Fried Rice

My recipe

Ingredients

2 to 3 cups COOKED brown rice (I use basmati)

1 cup Left over meat, fish or poultry, or tofu

2 To 3 garlic cloves

Small piece ginger

1/2 Large red onion or 3 to 4 shallots

4 Scallions

1/2 Fresh herbs, like parsley or cilantro

1 to 2 t Light soy sauce (I use Bragg's)

1 tsp Chili paste (sambal oelek) - optional of course

Olive Oil

Almonds (optional)

Preparation

Cut meats into chunks. Keep into separate bowl.

Smash, peel and chop garlic.

Peel and grate ginger.

Peel and chop red onion or shallots.

Keep garlic, onions and ginger together in one bowl.

Wash scallions and slice into 1/2 inch pieces. Keep in a separate bowl.

Wash and mince herbs, keeping in a separate bowl.

Into a small bowl, mix the soy sauce, the chili paste and a little water.

Chop almonds roughly.

In a large non stick skillet, heat 2 to 3 T of Olive Oil.

Saute onions, garlic and ginger for about 2 mns, stirring constantly.

Add rice, mix and saute 3 more minutes.

Add meat, mix and saute about 1 minute.

Add the soy sauce, chili and little water, mix, reduce heat, cover, and let cook for about 3 minutes.

Add the green onions and stir for 1 minute.

Mix in herbs.and almonds before serving.
