1 cup Cooked microwavable brown rice
1/3 cup Red beans
1 tsp Chopped cilantro
1 Egg, fried
1 tbsp Shredded low-fat mexican-blend cheese
Mix together the microwaved rice and the beans and top with the cilantro, egg, and cheese. Makes 1 serving
