Rinse and check beans for rocks. Put in pot with water. Add (good shakes) ground cayenne and Creole seasoning. Add a healthy pinch of basil and parsley. Add chopped onion and celery and cubed ham. Boil for about 30 – 35 minutes. (med-high heat)
Cut sausage and add with more water if needed. Cook on med – low heat until beans are soft. 15 minutes before serving turn fire off and mix ½ cup broth with cornstarch. Add to pot to thicken sauce. Serve over rice.
