Ingredients

1/4 c. Melted butter
1 c. Buttermilk (I often use milk)
1 tsp. Vanilla
2 Egg yolks
1 c. Flour
1 1/2 tsp Baking powder
1 tsp Baking soda
1/2 t Sugar
1/4 tsp Salt
Cinnamon to taste (I just sprinkle a light coat over the top)

Preparation

Blend the first four ingredients in a bowl then add the dry ingredients and mix gently. In a second bowl dump the 2 egg whites after dividing the yolk out. Beat with blender until soft peaks form. Then fold in the whipped egg whites into the rest of the ingredients.
