1 cup Rice - cooked
1/2 cup Marinated artichokes
1/3 cup Black olives sliced
1/3 cup Red bell pepper sliced
2 Hard boiled eggs sliced
Mix the rice with all the ingredients and add the dressing from the artichokes instead of salt and oil.
