Meat Loaf Preparation: (Makes 2 meatloaf)
Mix ground meat mix well with cream, ketchup, eggs, cubed bread, and pork rinds in large bowl. Add all dry spice, onion and pepper. Let mix sit for 1 hour in refrigerator.
Preheat oven to 400 degrees and heat cast iron pan over medium heat. Lay a large 8" heavy-duty spatula on cutting board. Lay 7 - 8 slices of bacon crosswise over spatula starting at bend near handle and ending at tip of spatula. Use 1/2 of meat mixture and form into 10" loaf. Place loaf over bacon on spatula. Starting at one end fold bacon one slice at a time over itself until entire loaf is wrapped in bacon. Take spatula with bacon wrapped meatloaf and carefully flip loaf (seam side down) into preheated cast iron pan. Sear bottom of meat 6 - 8 minutes until brown. Place baby squash around meatloaf. Remove from heat and bake in cast iron pan in 400 degrees oven for 40 minutes. Remove meatloaf and squash from pan onto serving plate and let stand 5 minutes before slicing. Repeat with second meatloaf so you have left overs.
