Fresh and tasty salad

Ingredients

1 cup Cooked rice

1 cup Cherry tomatoes

2 Hard boiled eggs - chopped

1/4 cup Olives - chopped

1/4 cup Feta cheese

1/2 cup Edamamme (or beans)

3 tsp Choped celery

Mayo dressing:

2 tsp Mayo

2 tsp Lemon juice

Preparation

Mix all the ingredients in a salad bowl and add salt if dessired. Enjoy it!

Cook's Notes

This recipe could be done with remaining rice in your fridge and if you dont have tomatoes use dried cranberries; feta cheese coud be replaced too with mozzarella and beans could be replaced with garbanzo beans or corn. Mayo dressing could be replaced with italian dressing too.
