Ingredients
2 cans Chick peas (garbanzo beans)
3 Roma tomatoes
4 cloves Crushed garlic
1 Cucumber
1 Container of goat feta
Extra virgin olive oil ( a really good quality)
Salt and pepper
Preparation
Mix together
garlic
chopped tomatoes
cucumber slices
goats feta cut into small squares or crumbled
salt
ground pepper
Then pour over to your liking extra virgin olive oil
Mix and your're done. Place into serving dishes for your week's lunches.
If you want you can add the olive oil before you actually eat it so it does not get mushy over time in the fridge.
