Baked Chicken with Prunes

Easy to make and mighty tasty. Helps prevent: stress/fatigue, aging, depression, hedaches, anemia, insomia, memory problems, immunity problems, constipation (79mg) cholestrol

Ingredients

4 Boneless skinless chicken

1/4 c Red wine

16 Pitted prunes

1 t Finely chopped fresh rosemary

1/4 t Salt

1/8 t Freshly ground black pepper

Preparation

Preheat oven to 350 F. Coat a 13"x9" baking dish with cooking spray.

Place chicken in baking dish.

In a small saucepan, combine wine and prunes. Cook on medium-high heat until wine boils. Pour over chicken. Sprinkle with rosemary, salt and pepper.

Bake for 30 minutes or until thermometer inserted in thickest portion register 160 F and juices run clear.

Cook's Notes

I haven't tried it with dried prunes yet but I am quite sure they would be just as good!
