Quick calzones

Ingredients

1 package Regular active dry yeast

1 cup Warm water ( 105-115F)

1 tbl Sugar

2 tsp Oil

1/2 tsp Salt

1 1/2 c Flour - all purpose

1 1/4 - 1 3/4 c flour - whole wheat

1 lb Ground beef, turkey, italian sausage, chicken

1 can Diced tomatoes - italian

3 oz Reduced fat mozzarella

1 can Spaghetti sauce

Optional:

1 Onion

1 Bell pepper

1/2 lb Spinach

3/4 c Feta cheese

Preparation

Brown the meat (add optional).

Dissolve yeast in warm water in large bowl. Stir in sugar, oil, salt, and all purpose flour. Beat with wisk until smooth. Mix in enough whole wheat flour to make dough easy to handle. Turn douch onto lightly floured surface; gently roll in flour to coat. Knead about 5 minutes or until smooth and elastic. Cover w/bowl or in a bowl for 5 minutes.

Heat over to 375F and prepare filling. Mix into cooked meat, diced tomatoes, spaghetti sauce and cheese (plus any options). Set aside.

Grease large cookie sheet. Divide dough into 6 equal parts. Roll or pat into a 7-inch circle. Place about 1/3 cup filling on half of circle and spread to within 1 inch of edge. Fold dough over and press w/fork to seal. Brush with egg white. Cut slits in top surface to vent steam. Bake 25-30 min.
