Cajun Chicken and Potatoes

Ingredients

1 lb. Russet potatoes

3/4 lb. Boneless, skinless chicken breasts

1 Small onion

1 tbsp. Vegetable oil

1 tsp. Cajun seasoning

1/2 cup Each: sliced celery, chopped bell

Pepper and chopped tomato

Hot Sauce (optional)

Preparation

Cut potatoes, chicken and onion into 3/4-inch cubes. Cook in hot oil in a large skillet over medium-high heat, stirring frequently, until potatoes and chicken are browned; stir in seasoning. Reduce heat and cook, covered, for about 15 minutes more or until potatoes are tender. Add vegetables and cook for 5 minutes more. Serve with Crystal Hot Sauce, if you like.

Thanks! May make this as a brunch hash.... could use bay leaf, thyme and garlic powder to lower sodium.
