Banana & Walnut Muffins A La Madeleine

Liver Cleansing Diet

Ingredients

5 Ripe bananas, mashed

1/4 cup Cold-pressed walnut, macadamia or

Olive oil

1/4 cup Honey

1 tsp Vanilla

2 1/4 c. All-purpose whole wheat or

Gluten Free flour

3/4 tsp Baking powder

3/4 c. Chopped walnuts

1/2 tsp Salt

3/4 tsp Ground nutmeg

1 tsp Baking soda

Preparation

Preheat the oven to 350F

Lightly oil a 12-cup muffin pan

Stir together the bananas, oil, honey & vanilla in a bowl

In another bowl combine the flour, baking powder, walnuts, salt nutmeg, and baking soda.

Stir the wet ingredients into the dry mixture & blend with a spoon.

Spoon this mixture into muffin cups, filling to the rim.

Bake until golden brown about 20-25 min. Serve warm

** Substitute whole wheat flour plus 1/2 tsp. baking soda & 1/2 tsp. baking powder
