Baked Chicken on Rice

Bake Chicken and Rice for an Hour. Serves 4.

Ingredients

1 can (10 3/4 oz.) condensed cream of mushroom soup

1 can Milk

1 can Mushroom stems and pieces

3/4 cup Uncooked regular rice

1 package Dry onion soup mix

4 Chicken breasts

Preparation

1. Preheat oven to 350 degrees F

2. Mix mushroom soup and milk. Set half aside.

3. Add rice, mushroom stems and pieces, and half of the dry onion soup mix.

4. Pour into 11x7x1.5" pan

5. Set chicken in pan

6. Pour rest of mushroom soup mixture over chicken

7. Sprinkle with remaining dry onion soup mix

8. Cover with foil

9. Bake 1 hour at 350 F

10. Uncover and brown for about 15 minutes

Cook's Notes

Chicken thighs work well too. They make more manageable serving sizes. Use enough to cover the rice, but not completely. I usually drain the mushroom stems and pieces
