pour 1 cup of apple juice into small saucepan
sprinke gelatin over apple juice and let it stand for 2 minutes while it plumps up. set pan over med-low heat and stir untill the liquidis completely clear and the gelatin has dissolved approx 6 minutes. remove pan and pour into bowl, add the remaining 3 cups of apple juice and stir untill blended.
set bowl of apple juice and gelatin into refrigerator, stirring every 5 minutes untill slightly thickened approx 1 hour.
when the mixture is the consistency of unbeaten egg whites remove it from the refrigerator and gently stir in the fruit. it will be suspended in the gelatin. Pour into a 8-inch baking dish, cover with plastic wrap and refrigerate untill firm approx 4 hours or overnight. Spoon into serving dishes, makes approx 9 squares.
