Beef and Bean Chimichangas

Easy baked chimichangas

Ingredients

1 lb Ground beef

3/4 c Chopped onion

3/4 c Diced green pepper

1-1/2 c Whole kernel corn

2 c Taco sauce

2 tsp Chili powder

1 tsp Garlic salt

1 tsp Ground cumin

1 can Refried beans 16 oz can

8 Flour tortillas 12 inch

16 oz Shredded cheese (monterey jack, cheddar or your favorite)

1 tbs Melted butter

Shredded lettuce

1 Diced tomato

Sour cream

Preparation

Preheat oven to 350 degrees. Brown ground beef. Drain grease and add onion, bell pepper and corn. Cook for about 5 min. more or until veggies are tender. Stir in taco sauce and all seasonings, stir until blended. Cook until heated through. Spread thin layer of beans on tortillas and spoon beef mixture down center and add cheese. Roll up tortillas, place seam side down on cookie sheet. Brush with melted butter. Bake for 30-35 minutes or until golden brown. Serve with lettuce, tomato and sour cream is desired.

Cook's Notes

I have made several variations of this. I can never roll the tortillas without them ripping so I have been using the fajita size tortillas and just rolling them up like taquitos. I usually just add taco sauce so the mixture is moist but not too sloppy. I also don't add beans because my husband doesn't like them. I always have some of the beef mixture left over so I've used it to make nachos as well. Variations: - add jalapeno - make with canned chicken or shred your own chicken
