Salmon Patties

The T-Factor Diet

Easy to make and low fat entree.

Ingredients

1 can (15 oz.) of salmon

1/4 cup Finely chopped onion

3/4 cup Bread crumbs

1 Egg, slightly beaten

1 tablespoon Lemon juice

1/4 teaspoon Fresh-ground black pepper

1/4 teaspoon Nutmeg

Nonstick vegetable cooking spray

Preparation

1. Combine all ingredients in a bowl and mix well.

2. Cover and refrigerate the salmon mixture for an hour or more.

3. After chilling, shape into 4 patties approximately 3/4 inch thick.

4. Spray a nonstick skillet with cooking spray and fry the patties over moderate heat, turning once, until browned on each side.

Cook's Notes

I like to serve this with sugar snap peas and mashed potatoes using only evaporated milk, salt and pepper.
