Quick Bean Quesadillas

Southwest favorites are easy with five ingredients you probably have on hand.

Ingredients

1 cup Old El Paso® Refried Beans

8 (7 or 8-inch) flour tortillas

1/2 cup Old El Paso® Cheese 'n Salsa Dip

1/2 cup Purchased guacamole

1/2 cup Old El Paso® Salsa

Preparation

1. Spread 1/4 cup refried beans on each of 4 tortillas.

2. Place 1 bean-topped tortilla in medium skillet over medium heat. Spread 2 tablespoons dip over beans. Top with an additional tortilla. Heat 5 minutes.

3. With large pancake turner, turn quesadilla; heat an additional 1 to 2 minutes. Repeat with remaining tortillas and dip.

4. Cut each quesadilla into 8 wedges. Serve with guacamole and salsa.

Cook's Notes

Served as a meal or as a quick snack, these Mexican sandwiches are delicious with pineapple wedges.
