Chocolate Chip Cookies

A healthy take on an old fashioned favorite.

Ingredients

2 c. Whole Grain Flour

1/4 c. White flour

1 tsp. Baking soda

1 tsp. Salt

1 c. Smart-balance omega 3 butter, softened

3/4 c. Unrefined sugar

3/4 c. Splenda brown sugar

1 tsp. Vanilla

2 Large organic cage-free eggs

1 3/4 c. Chocolate chips

1 c. Nuts (optional)

Preparation

Preheat oven to 375F.

Combine flour, baking soda and salt in small bowl. Beat butter, sugar, brown sugar and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. BEAT WELL. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto baking sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Makes about 5 dozen cookies.
