Frog Pond Breakfast Frittata

A great way to use up leftovers.

Ingredients

6 Eggs

1 t Butter+ 1T olive oil

1 Small onion

½ green pepper

Mushrooms canned or regular

2 Left over baked potatoes, diced

Left over breakfast meat: bacon, ham, sausage, or Italian sausage

Salt and pepper to taste

1 cup Shredded cheese(s) ( almost any kind will do. I prefer sharp cheddar and mozzarella)

Preparation

1) Whisk eggs and put to side.

2) Heat oil and butter over medium heat and add the onion, green pepper, and sliced mushrooms. Cook until soft.

3) Add diced potatoes, breakfast meat, eggs, salt, and pepper.

4) Gently stir and cook until eggs are firm and moist, not dry or drippy.

5) Add cheese. Cover pan until melted.

6) Serve with hot buttered toast.
