Mexican grilled cheese sandwich AKA Cheese Quesadillas

This is a regular at our breakfast table. Sounds strange, but the kid's like it for a change.

Ingredients

Flour tortillas

Grated sharp cheddar cheese

Taco toppings optional

Preparation

1) On a large preheated (medium /high) pan, place one tortilla.

2) Heat until tortilla starts to poof up, then flip to other side.

3) Spread an even layer of grated cheese on ½ of tortilla, folding other ½ of tortilla on top of cheese.

4) When bottom of quesadilla is brown, turn over to other side.

5) As soon as cheese is melted, remove from heat.

Cut into pie shaped wedges and serve alone or with taco toppings.
