Grandma Lois’s Goulash

Grandma made this for her kids and now I make if for mine. It is a simple family pleaser in my home.

Ingredients

1 lb Ground meat (beef, pork, or turkey)

1 tsp. Salt,1/4 tsp. pepper, 1/2 tsp. garlic powder

1 Small onion, chopped

½ green pepper, diced ( optional)

1 Large can tomato juice ( I use V-8 sometimes)

1 box Elbow macaroni

Preparation

1. Heat oil over medium heat and add the onion and green pepper.

2. Cook for about 5 minutes stirring occasionally until soft.

3. Add ground meat seasoned with salt, pepper, garlic powder.

4. Cook until browned, drain, and return to heat.

5. Add tomato juice and simmer about 10 minutes stirring occasionally.

6. Cook elbow macaroni until tender.

To serve: spoon macaroni into bowl and ladle goulash over noodles. This way, the noodles never get soggy!

Serve with crusty French bread.

Cook's Notes

Make-ahead hint: Pre-cook seasoned ground meat in large batches and freeze 2 cups/1 quart bag. Thaw in microwave and proceed with recipe.
