2 Sm. heads of Romain Lettuce
1- 15 oz Can of pinto beans
2 Ears of corn
2 Avocados
1/2 Red onion
1/2 c. Cilantro
1/4 c. Olive oil
1/4 c. Lime juice
1/2 ts. Cumin
1/2 - 9 oz. Bag of corn tortilla chips
Salt & pepper
In a large bowl combine lettuce, beans, corn, avocado's, onions and cilantro.
In a small bowl whisk together oil, lime juice, cumin, salt & pepper.
Drizzle over salad and toss.
Serve with chips
Can be served with pita bread, or warm tortillas for variation.
