Ingredients

2 15 oz Cans black beans
2 15 oz Cans black eyed peas
2 15 oz Cans corn
1 Jalapeno pepper
1 Red bell pepper
1 Green bell pepper
1 Small red onion
1 bunch Fresh cilantro
1/2 cup Vinegar
1/2 cup Olive oil
1/3 cup Sugar
6 Fresh garlic cloves

Preparation

1) Drain and rinse black beans, black eyed peas, and corn. Combine into a large mixing bowl. Set aside.

2) Wash all vegetables.

3) Seed and chop jalapeno pepper, Red bell pepper, green bell pepper. Add into the large mixing bowl.

4) Prep and chop red onion cilantro. Add into the large mixing bowl.

5) In a small sauce pan, combine vinegar, olive oil, and sugar. Bring to a bowl, then allow to simmer until sugar is dissolved. Pour mixture into the large mixing bowl.

6) Stir well and chill in refrigerator before serving.

Cook's Notes

Serve with tortilla chips. We prefer the Tortilla scoops.
