Ingredients
1 1/2 Tps unsalted butter
1 1/2 Tps flour
2 cups Corn (canned or fresh cooked/cut)
1 1/2 Tps cornstarch
1/2 Tps salt
1/8 Tps pepper
1/8 Tps sugar
2/3cup 1% milk
If using fresh corn, boil (2-3 ears) for 3-5 minutes. Cool and cut from cob, I find breaking the ears in half makes cutting the kernels a neater and easier process.
Preparation
Melt butter in saucepan
Stir in flour and cook 1 min, stirring constantly (will be thick)
Add corn, cornstarch, salt, pepper, and sugar (adjust seasonings to taste)
Gradually stir in milk and bring to a boil
Reduce heat and simmer approx. 3 minutes
Supposedly 85 cal. per serving, but not sure of this
Serves 6
Cook's Notes
Recipe can be doubled.
A combination of fresh and canned corn works well too.
