Barbacued pork with sweet potatoes & apples

Ingredients

Non-stick garlic flavored spray

2 tbsp Barbecue sauce

2 tbsp Chopped mango chutney or orange marmalade

2 tsp Soy sauce

1 12 oz Pork tenderloin

2 Gala or other red apple, cored and cut into 3/4 in. wedges

3/4 tsp Curry powder

1/4 tsp Salt

2 Small sweet potatoes, peeled and sliced thinly

8 Scallions, ends trimmed

Preparation

1. Heat oven to 500 degrees. Line 2 rimmed baking sheets with foil and greese foil.

2. Mix barbecue sauce, chutney and soy sauce, spread over pork loin. Place pork loin on one side of a baking sheet. Coat apples with garlic spray, sprinkle with 1/4 curry powder and 1/8 salt and place on other half of baking sheet.

3. Spread sweet potatoes in the other greased baking sheet coat with grlaic spray and sprinkle with remaining curry powder and salt.

4. Place both baking sheets in the oven. Roast potatoes for 12 minutes or until tender. Remove potatoes to serving platter and cover to keep warm. Continue to bake pork loin until meat thermometer reads 160 degrees. and scallion and apples are tender.

5. Allow pork loin to rest for 5 minutes, then slice and place on serving platter with apple, scallions and potatoes.
